New Chef’s Choice Diamond Hone

One thing I have learned to count on at SHOT show (Shooting, Hunting, Outdoor Trade) each year is that Chef’sChoice will have a new technologically advanced model electric knife sharpener on display. And when I say “new and technologically advanced,” I don’t in any way mean that tongue-in-cheek. They really do work hard at developing advanced products on a regular basis and have had great success over the last decade. This year’s introduction was the “Model 2100 Commercial Diamond Hone Knife Sharpener.”
Mention any of the electric Chef’sChoice sharpeners in print and a certain type of cutlery snob will immediately come out of the woodwork to decry “electric blade eaters.” Frankly, I think all of these “experts” are missing the point. First off, knife sharpening tends to be a complete mystery to both the average commercial kitchen and home cutlery user.
