A couple of decades ago, I started a mail-order business focused on marketing professional meat and food processing knives to the “back-to-the-land” movement then in vogue. Having printed catalogs, I decided it would also be logical to make calls on all of the small slaughterhouses, fish processors and butcher shops within a hundred-mile radius around my home.

Whenever I spread my line out for the inspection of self employed and small-shop pros who bought their own knives, I almost always heard the same comment, “I prefer Forschner Victorinox.” I was soon reduced to actually giving sample knives to these pros in hopes of changing their brand preference. Didn’t work. They all stayed diehard fans of the Swiss brand. As you may have noticed, I’m in a different line of work now.
