The performance of knives and other forms of cutlery has been relatively static since the invention of stainless steel in the early 1900’s. Certainly, there have been some significant advances, but the simple fact is that a high-quality knife made 100 years ago can perform nearly as well as most knives made today. Well, that has just changed.
